Sofrito Stuffed Red Peppers

It's week #11 of the @steemit-ironchef challenge here on the STEEM platform. The special ingredient for this week is the Bell Pepper. The Bell Pepper comes in a range of colors and each has a slightly different flavor. Here I will show you a recipe for stuffed Red Bell Peppers, but you can really use whatever color you'd like. It's a simple, relatively healthy meal that will be sure to leave your taste buds satisfied.

Ingredients

1 1/4 Pounds Ground Beef
4 Red Bell Peppers
1 Red Onion
1 Cup of Sofrito
1 Cup of Cooked Rice
1/2 Cup of Sour Cream
2 Cloves of Garlic
Shredded Monterey Jack Cheese

Step 1: Cook the Rice

I used Wild Rice but you can use whatever rice you'd like.

Step 2: Dice the Onion & Garlic

Dice up the full onion and 2 cloves of garlic into small pieces.

Step 3: Shred the Cheese

You will need roughly 1 cup of shredded Monterey Jack cheese

Step 4: Core the Peppers

Cut out the top of the peppers and remove the pit and seeds. Use a knife to remove the ribs.

Step 5: Cook the Onions & Garlic

In a large skillet, begin cooking the onions and garlic with olive oil on medium heat

Step 6: Add the Meat and Brown It

Add the ground beef and mix it all together. Cook until the beef is browned.

Step 7: Mix The Filling

In a large bowl, combine the rice with the sofrito, sour cream, and meat mixture. Toss until well mixed.

Step 8: Stuff the Peppers!

Fill each pepper with as much of the mixture as you can. Place in a casserole dish.

Step 9: Bake 'Em

Cover with tin foil and put it in the oven on 350 degrees Fahrenheit for 20 minutes.

Step 10: Cheese 'Em

After 20 minutes in the oven, take them out and load shredded cheese on top of each one.

Step 11: Back in the Oven

Place them back in the oven for roughly 15 more minutes until the cheese starts to bubble.

Step 12: Enjoy!

Take the peppers out of the oven and let them cool a bit before digging in!

Little hint, don’t put all the meat in the pan at the same time, you end up boiling all the juices off the meat, instead of browning it.
