This was my first time both eating and preparing it, and I'll tell you, if you like the inside of a ravioli, this is even better! It's got a chewy/crispy outside and light and fluffy ricotta/veggie inside. So yum! (and fairly easy to prepare). I made a ton extra and put them in the freezer for a quick meal next time I want gnudi :)
