STEEMIT IRON CHEF 2017 #02: CARROT GNUDI AND SAGE BROWN BUTTER CARROTS

For this week's theme CARROTS, I have made carrot gnudi with sage brown butter carrot coins.
In case you haven't had gnudi before, it's essentially the fluffy ricotta filling of ravioli without the pasta exterior.
Pureed steamed carrots mix with creamy light ricotta and savory parmesan cheese to form little dumplings of light and creamy carrot deliciousness. Three egg yolks and a sprinkling of flour help to hold these little baby dumplings together. Salt and black pepper are the only seasonings in the gnudi themselves, to let the carrot flavor take center stage.
Each gnudi, formed individually by hand, is dusted in flour to coat, and rests for a few hours until the exterior dries out a bit so the little dumplings hold together while they cook.
The gnudi are first dunked in boiling salted water for about 4-5 minutes until they float to the surface.
Then they are transferred to a pan to mingle with butter, garden sage, and carrot coins cut on a deep bias.
Once the gnudi and carrots are lightly browned on all sides, this dish is ready to eat.

You always make dishes that are really savory looking! I just want to eat a huge bowl of these gnudi! They look like they have a great crispy texture on the outside and super soft inside. I like your use of closeups and the depth of field work too. I am also a big fan of cast iron skillets!

Interesting! I never heard of (or tried) Gnudi before but it looks like a delicacy! Puffy and delicious!
This was my first time both eating and preparing it, and I'll tell you, if you like the inside of a ravioli, this is even better! It's got a chewy/crispy outside and light and fluffy ricotta/veggie inside. So yum! (and fairly easy to prepare). I made a ton extra and put them in the freezer for a quick meal next time I want gnudi :)
Another wonderful creation from you! I love gnudi and so I took a gnocchi and gnudi class ~5 years ago. Have I made it? No! But you've inspired me to look into it again. Carrot gnudi ... yes!
Wow!! I'd love to take that class! I also made gnocchi for the first time a few weeks ago with purple potatoes from the backyard - and it was easy and delicious!! Where do you take classes like that?
I took this particular class at a local natural foods market. I even bought the gnocchi board (paddle?) but I haven't used it. Need to really put it to use!

Thanks @progressivechef! This was my first attempt at making and eating gnudi, and I'm so glad I took the jump! Gnudi might be my new favorite dinner food! I'm glad that the gnudi are essentially half vegetable (carrot) and half ricotta. So they are very light and flavorful without being heavy. Yumm!!

This is so beautiful. I've never heard of gnudi before but it looks like something I would love. Great entry.
These are easy to make and one batch goes a long way - so i've got tons in the freezer for a rainy day! If you like ricotta and veggies, then you'll love these because the texture is just amazing. Crispy chewy outside and light creamy fluffy inside. oooo!

Yes, similar, except these are cheese and veggie based, while gnocchi is potato and flour based. So as you can imagine, the ricotta cheese and veggie is much lighter and creamier than the more chewy pasta texture of gnocchi. You've definitely got to try these! Yum!!

Wow this is the first time I've heard of gnudi..somehow looks like gnochhi =) I am marvelling at those perfectly-browned pieces which are probably soft and melt-in-the-mouth on the inside..

Girl you've got to try them - this was my first time making and eating them, and think of lighter, creamier gnocchi - I think that so many things can be done with these - all colors based on different veggies and spices....endless! Thanks @foodie-warrior :)
OooOO..that sounds sublime..I think the possibilities for so many food items are pretty untapped too!!! for me at least, I find these contests stretching to many limits that I didn't even know could be actualised. All part of the fun! =)
So true! I feel the same way - like once it's 'go' time my brain just starts turning gears I didn't know were in there. It's so great - and i think it'll help us to not get 'old brain' - keep us on our mental tip toes :)
