Carrot Carpaccio
This dish I made as the starter for a 4 course Carrot inspired dinner
**Starter : Carrot Carpaccio **
finely sliced carrot strips
dressing of extra virgin olive oil fresh basil, garlic, salt and pepper and a few drops of lemon juice
leave to marinate a couple of hours
Garnish with parmasan shavings
Simple but full of flavor....

Sounds paradoxical but delicious...
it was delicious actually, but best to leave it to marinate minimum 2 hours
OK why?
so that the carrot strips get the max effect from the marinade
OK makes sense, why does it take so long though?
