Carrot and Butternut squash Soup
This dish I made as the starter for a 4 course Carrot inspired dinner
Soup : Carrot and Butternut squash Soup
steps
- brown shallots and garlic in butter and olive oil
- add carrots (peeled and cut to smaller pieces) and Butternut squash
- add vegetable stock and curry powder
- leave to simmer until soft... but not loosing color ...
- blend with a handblender ... you could additionally sieve it to get an even smoother soup...I also stir in a bit of double cream for extra velvety softness and add seasoning to my liking ...
- Plate up... I add a bit of double cream on top for looks and serve with hot bread
A full on explosion of flavor in your mouth, a very hearty soup for scandinavian winter evenings ...
