Entry plate: Celery tuber cream with cilantro
I want to tell you a little about this vegetable. It is known in Venezuela, Colombia, Peru, Brazil, Bolivia and Ecuador with the name of celery. It is also called arrecacha. It has a very fine starch, high in calcium, vitamin A and phosphorus. It is native to the Andes, as it is an area with an optimal climate for tuber cultivation.

Ingredients:
• 500 grams of celery.
• 10 grams of coriander.
• 2 cloves of garlic.
• 1 small teaspoon of olive oil.
• 20 ml. of water.
• Salt to taste.

Elaboration:

Wash, peel and cut the vegetable. Then, place it to cook over low heat and let it boil for 5 minutes. Turn off and let stand. Once the celery is warm, place in a blender with the 20 ml. of water, 2 cloves of garlic, coriander and a teaspoon of olive oil. Blend all the ingredients and you will have a nutritious celery cream with coriander.
