#Food #Porn: Artichoke & Chanterelle Pasta

Here's another delicious #recipe from me!

These days are perfect for the growth of many #mushroom species cause the temperature is high enough but too high & there's a lot of humidity in the air with occasional raining. Perfect conditions for my #garden too! I was lucky to have such a spring here in the Kvarner Bay in Croatia! The spring of plenty!

It all started with cooking the artichoke: image cause it needs the longest period to be cooked...

#Artichoke is #vegan #scampi! 😆

Than, after 10-15 min I threw in some pasta - 2 different kinds made of #spelt: image & let it boil some 8 min more. I took it of just at the time when pasta "al dente" & the artichoke was just soft enough to be eaten & not overcooked.

In the meantime I was preparing other ingredients: image - I even still found & picked 2 pieces of #asparagus while picking #chanterelle & this garlic bud I brought from the garden.

In my parts of Croatia #garlic #buds we call "paski" & consider them a delicacy!

I also cleaned up the chanterelles: image & mixed them with asparagus & the garlic bud. I threw them all together in frying pan on the very high temperature with no oil just give it a bit of salt so that the mushrooms let out the water: image

I added half of a tomato for the taste & for colour: image

In the meanwhile, of course I needed a vine break! Especially when you have such a good #malvazija made by the #Simonovic family from Vižinada, Istria... image

I also put in a piece of green chili whithout seeds which I grow on the balcony, where I also cook: image

I fried the ingredients for maybe 5 min & then added pasta & artichoke so that they all blend together & watered them all with 1 dl of that same white vine. I let the blending to last as long as the vine haven't evaporated.

Before serving I added a bunch of oregano, capers, domestic olives which I picked manually & conserved last winter, Sun flower & sesame seeds & voila!

On the plate I poured over some extra vergine olive oil from another Istrian family from Cerovlje - Blagonić.

At my favorite brewery they have bathtubs full of Witbier that they let me bathe in. I'd love a spa day of bathing in beer while enjoying this food.

Artichoke and mushrooms are quite healthy. I need to eat more of those in general, but I find it hard to incorporate them into meals properly. Not a big fan of their taste.

Hm, well, I don't eat fish nor meat & I don't quite often go to the supermarkets. I try to collect food in the forest or grow it in the garden or sometimes I buy some food from other hunters or growers... I have a deep relationship with my food, I could say. I don't just experience food through the taste but also through the benefits for the body, the mind & the soul I get by consuming the high quality natural food... Try to reprogram your taste! It is done by commitment & training! Good luck!

I actually did reprogram my taste once, but in a different way than you.

The firs time I did a three day dry fast really changed the way I recognize the taste of food. On one hand, I found myself being able to eat and enjoy foods that I didn't previously to that. On the other hand, I also ended up getting a distaste for food that I found to be unsuitable, unhealthy or overly processed.

Very interesting! Try buying some amount of mushrooms or artichoke & prepare it in different ways...

Already toying with that idea. I will do it at some point this week if I see some decent mushrooms while doing grocery shopping.

That's good! If you don't find the fresh ones, go for the dry ones cause sometimes those are even better! Depends of the species...

Dry ones? I have seen them sold in asia stores. I keep that in mind, I can see why those would be tasty.

It's actually the awkward watery consistency added with the lack of flavor that makes me dislike mushrooms. Can you just eat dry mushrooms or are you supposed to prepare them in a certain way?

Well certainly you can chew some species directly dried without additional cooking but they will probably be very gummy & hard to chew. I have never tried to do so except of chewing the dry magic mushrooms whose taste I really like.

Considering the mushrooms coming from China, I must inform you that recently I've read an article about the toxic research of those mushrooms in which was discovered the high level of poiseness substances.

My advice woyld ve that you try to dind dried mushrooms which were picked in the forest where they were growing wildly cause the very similar rumours came to me - of highly intoxicating substances been found in artificially grown mushrooms coming from anywhere but especially from China!

I LOve it when people share recipes on Steemit, because I tried some of them and they were really good, so thanks to you for doing this, I will use this tomorrow and be sure the meal will be delicious.
