Week ONE: Six Week Health - Baked Chicken Breast over Oat Porridge

We first stumbled upon @healthsquared 's challenge on this platform a few days back and we're pretty sure everyone wants a slice of that 'tasty' reward that he's offering at the end of the week. If your post doesn't get chosen this time around, maybe your next post might hit the jackpot! Just don't stop trying and keep your motivation levels high! The same also goes when it comes to having a healthy body, mind & soul. It's a constant process that needs us to be alert, motivated and always have an eye on the prize at all times!

Now, there's no shortcuts when beginning the strenuos journey in losing those extra pounds. That's the misconception of us as humans, we start exercise today and expect to have a six pack tomorrow. It sure as heck doesn't work that way because even Rome wasn't built in one day! So this six week challenge is the perfect fuel to burn the motivation bonfire! Because let's face it, in the end, whether our post wins a weekly challenge or not, the real reward is our health!

So today, we would like to share with ya'll this super easy recipe that we've conjured up ourselves! It's our humble version of the classic oat porridge! Let's get started shall we? Don't worry, it's easy as 1 2 3, promise!

★ Baked Chicken Breast over Oat Porridge ★

Ingredients:- (for one serving of oats)
Rolled oats Half cup
Carrots (brunoise)
Celery (brunoise)
Onions (brunoise)
Olive oil 1 tablespoon
Low fat milk or plain water 2 cups
Salt & Pepper to taste

Chicken marinade:-
Boneless breast 100 grams
Mixed herbs 1 teaspoon
Salt & pepper to taste
Olive oil 1 tablespoon

Method:-

  1. Pre-heat oven to 180°c
  2. In a pan over medium heat, sautee the brunoised onions, carrots & celery with olive oil until fragrant. Keep stirring.
  3. Add in the liquid (milk or water) into the pan.
  4. Let it simmer for a while.
  5. Put in the oats into the pan, stir until even and let it simmer until you get your prefered 'porridgy' consistency.
  6. Turn off the fire.
  7. Bake the chicken in the oven for 10-15 mins. Depending on the thickness of your cut.

Pour porridge into a bowl, slice the chicken and set on top of the porridge & enjoy!

This super easy recipe can be served as breakfast, lunch or even dinner! We had this last night for dinner after a short sunset hike up a local hill here in Kota Kinabalu, Sabah. Safe to say our bodies got a good workout and our tummies are satisfied too!😃
