Simple Spicy Salsa

This simple salsa takes only minutes to make, and as delicious as it is, you shouldn’t be surprised that it only takes minutes to eat too.

I am one of those people that detests the taste of cilantro, so I keep it far far away from my salsa. But if you are one of those people who enjoys the herb, I believe a few tablespoons of chopped fresh cilantro would work for you in this salsa.

Of course being from New Mexico, I always add Hatch green chile, but jalapenos or any chile pepper can be added at varying amounts depending on your preference of heat and spice.

This is the perfect condiment to dip your perfect quesadillas in, but nothing beats the yummy simplicity of chips and salsa

Ingredients:

  • 1 28 ounce can whole tomatoes, do not drain
  • ½ cup chopped onion
  • 1 clove garlic, minced
  • juice of 1 lime
  • ½ cup green chile (or jalapenos), chopped
  • ½ teaspoon salt
  • ½ teaspoon cumin
  • ½ teaspoon red chile powder
  • 1 teaspoon honey

Place all ingredients in a food processor or blender and pulse until desired consistency is reached. The tomatoes and their juice, onions, and chiles should be placed in the processor first.

Allow to sit for 1 hour before serving, this allows all of the flavors to coalesce.

Keep covered and refrigerated for up to ten days.
