The Empire (biscuits) Strike Back!
Have you ever tried an Empire Biscuit? Oh my word they are melt in the mouth amazing. I have them lots and my daughter loves em. But why not take the gluten out and see how they go!
I was going to a little playdate with my daughter but her friend can't take gluten so I thought I would whip up some gluten free biscuits and when it comes to biscuits there can be only one! No farting for these kids!
Let's get cooking!
You will need

200g gluten free plain flour
150 grams of unsalted butter
50g icing sugar
Pinch of sea salt
Raspberry jam
For the topping
100 grams icing sugar
2 tablespoons of water
Jelly Tots (or any jelly kind of sweet, heck any small sweet!)
To make
Chop the butter up then mix with the flour in a food processor till it looks like crumbs
Add the 50 grams of icing sugar and whizz a little longer till it clumps together like a sort of dough. Then roll your dough into a ball and place in a seal'y bag in the fridge for twenty minutes
Get your oven on at 170 degrees
Heavily flour your worktop to avoid the dough sticking then pull out your wooden truncheon and be menacing
Roll the dough out to about 4mm thick, you dont have to be to exact
Use a variety of things to cut out random pairs of circles. I like different sizes!
Get them in the oven on a lined baking tray, they take about 12-15 minutes. You don't want them to colour much. Once they are ready let them cool for ten of fifteen minutes before removing from the tray as they will be soft at first.
Make your icing by mixing the water and 100 grams of icing sugar. This bit sometimes takes more water or more icing sugar to get a drippy but not too runny consistency
Now lets assemble these badass little feckers
Stick one circle down, spread jam on it thickly. Sandwich another on top. Then dollop on some icing. Your icing should be runny enough to spread out by itself. Before it sets add your little jelly tot or similar sweet

You know I have no idea how they make gluten free flour it makes them a lot more crumbly but still delicious!! I had you in mind when I was making them! :0)
