Corn Pudding - Recipe

The one thing, I noticed about moving to Los Angeles from the deep south was there are quite a few different foods missing at grocery stores and restaurants in the area.
Every once in a while, I'll see collard greens, grits, black eyed peas and the like, but generally never corn bread unless I'm at Marie Callendar's or Popeye's Chicken.
For some odd reason, the Ralph's at UCLA had an unusual amount of cornbread out on display, last week. I had to ask myself, what was the occasion?
Then I started thinking, that I've NEVER seen corn pudding anywhere on any menu at anytime of my life except at my one aunt's house when I was growing up, and I inherited the recipe.
Was corn pudding a lost recipe from the 1960's and 70's? Was it a northern food brought to the south by my aunt in our family, or was it a purely southern thing? I don't know.
But what I do know is this recipe is SO easy and so good, you're really going to have to try it if you like comfort foods on occasion like I do. It's my mac & cheese.
Here's how simple it is:
Ingredient List:
1 - 14.75 Ounce Can Whole Kernel Plain Corn (Drained)
1 - 14.75 Ounce Can Creamed Style Corn
1 - 12 Ounce Can Evaporated Milk
2 - Eggs
3 - TBSP Flour
Salt & Pepper
1 - 9"x9" Baking Dish Greased and Floured
See what I mean? It's an easy list of ingredients, you can pick up for under $10 at the local grocery store.
Step One: Preheat the oven for 325 degrees Fahrenheit.
Step Two in a bowl:
Beat the Eggs and blend in all of the ingredients.
Season with a dash of salt and pepper.
Pour the mixture into the grease and floured baking dish.
Bake for One Hour and then test with toothpicks to assure none of the mixture sticks.
If it does, bake for another five minutes and then test again. Keep doing so until none of the mixture sticks.
You can bake this the day before if you wanted to serve it with a holiday dinner, and then warm it up in the microwave. As you can imagine, this dish goes great with turkey, chicken, ham, and roast beef.
It's really the perfect side dish to bring to a pot luck or informal dinner party, not only because it's delicious, but it's not something you see everyday on people's tables. I'm bringin' corn pudding back, baby!
I could eat it right now... Maybe, I will.

That corn pudding looks appetizing. I was thinking of replacing salt and pepper, sugar and make it sweet. What do you think? have you tried it?
Thanks. You could do that, I suppose. Would probably taste really good. Maybe some sweetened condensed milk.
