MAYONNAISE - VEGETARIAN & VEGAN
RECIPE 1
• 300 ml of vegetable oil
• 150 ml of milk (cold)
• 1 / 2-1 tbsp. of mustard powder
• 3/4 teaspoons of salt (or to taste)
• 2-3 tbsp. of lemon juice (or vinegar)
• 1/2 teaspoon of sugar (if desired)
Beat all blender.
RECIPE 2
Replace milk in RECIPE 1 with 150 ml of aquafaba
First, whisk the aquafaub with all the ingredients, except the oil, up to the foam. Then gradually pour in the oil, do not stop whipping, achieving the right density.
