HEALTHY EATING…ITALIAN CHICKEN PATTIES…Healthy, Easy & Quick

Hey All…Hope You are doing well. This is my 1st post after my introduction post. Here I am with a healthy easy and quick chicken recipe for you all. For this yummy recipe u don’t have to go out to buy the ingredients. You just to have some boneless chicken inside your freeze. So let’s start………
(At the End of this post don’t forget to check some tips about this recipe, some substitute/replacement)

Italian Chicken Patties (10-12 Patties)


Ingredients

Minced Chicken- 250 grams
Chopped red pepper- 3 table spoon
Chopped sundried cherry tomatoes- 10-12 (Blanched in warm water)
Dried Italian herbs- 1 tea spoon
Red Chilli Powder/Paprika -1/2 tea spoon
Fresh Italian Basil- 6-7
Olive oil to brush the pan
Salt to taste
Mayonnaise (OPTIONAL) – 2 table spoon
Step 1

Mix all the ingredient except mayonnaise and Olive oil.
Give it a proper mix, so that all the ingredients blend well.

Add the mayonnaise and mix again

Refrigerate the mixture for 10-15 minutes
As I said you can skip Mayonnaise, if you want it to be a perfect healthy snacks. It’s optional

Step 4
Take out the mixture from the refrigerator
Wet both your palms with water and divide the mixture into 10 to 12 parts

  1. First after dividing, give it a round shape.
  2. Press it and try and give it a patty shape (make sure you palm should be wet all the time of this process)
  3. Make sure the sides are also perfectly shaped
  4. The patties are now ready to go in the pan

Keep the pan on the gas stove in a medium heat
Brush the oil

As soon as the oil is hot, put the patties on the pan
Cook for 4 to 5 minutes each side and you are done.

And now to go with these yummy patties, I made a quick salad

Mix all the ingredients shown in the pic
Add salt & pepper to taste.

Now the patties are ready to serve

TIPS

  1. You can use your choice of veggies too. (Broccoli, carrots onion etc.)
  2. Make sure all the extra veggies you adding are chopped nicely
  3. You can add fresh herbs too
  4. No need to add extra oil, just brush the oil. Chicken will release some water and oil from its fat too.
  5. If you are not that health conscious, u can add some grated cheese too.
