Baked pumpkin with yoghurt and turmeric

Ingredients:

• 1 large pumpkin, peeled and cut into pieces;
• 1 large red onion, sliced;
• 1 tablespoon of salt;
• 1/2 teaspoon ground cumin;
• 1/2 teaspoon ground parsley;
• 1/4 teaspoon ground turmeric;
• 1/4 teaspoon ground cardamom;
• 1 stick of cinnamon;
• 1 hot pepper, cut in half and peeled from seeds;
• 1 cup of vegetable broth;
• 1 cup of yogurt without flavoring;
• 1-2 tablespoons chopped cilantro;
• 1 tablespoon lightly toasted pumpkin seeds.

Preparation

Preheat the oven to 220 degrees. Lubricate the baking sheet with vegetable oil and spread the vegetables on it. Mix together the spices and add to the vegetable mixture, thoroughly mixing everything with your hands. Top with hot pepper and a cinnamon stick, cover the baking tray with foil and bake until ready for about 30-35 minutes, that is until vegetables (especially pumpkin) are soft.

Then remove from the oven, remove the foil, mix everything well and again, send it to the oven for half an hour or until the vegetables are slightly fried, covered with a golden crust.

Before serving, remove the hot pepper and cinnamon stick, spread on plates and season with yoghurt, chopped with cilantro, pumpkin seeds and a small amount of lemon or lime juice.
