Balkan Cuisine #5 - Three ways to prepare Celery Root. Simple and healthy!

I love the smell and taste of celery. I must admit that I started to use celery more often a year ago in a variety of ways, since it is extremely healthy and nutritious vegetables.
For example, celery contains many carbohydrates, which means it is very nutritious. It is rich in pectin and herbal antibiotics. It contains a whole range of vitamins, most vitamin C, vitamin A, almost all vitamins from Group B, and there are vitamins F and K. Celer is rich in minerals potassium, calcium, phosphorus, iodine, copper, iron, one third of all minerals potassium. Celery due to the high content of essential oils has a very specific and strong taste. Essential oils accelerate digestion and the exchange of matter in the body, in addition, the celery contains potassium, which stimulates the secretion of the liquid.
The celery leaf is nutritious and healthy, it contains as many as seven times as much vitamin C as its root.Source ... and so on and so forth...
In short, Celer is a source of health.

In Balkan Cuisine celery is very present. It is one of the main ingredients of classical chicken or beef soup, which is often used as an appetizer in these areas.

Here are some simple ways to prepare this aromatic vegetables.

Celery Root Puree

The main ingredients of this recipe are celery root, potato, milk and butter. You can change the ratio of potatoes and celery. I prefer to dominate celery, so I put twice as many celery in relation to potatoes.

Bring to a boil one larger root of celery and one potato, previously chopped into pieces. Reduce heat to medium-low and simmer until tender, about 15 to 20 minutes. When vegetables become soft,leave it in a little water in which it is cooked. Then, combine vegetables, one spoonful of butter and 1 dl of milk and blend until smooth. Season to taste with salt and pepper.

Celery Root French Fries

This is a much healthier variant of french fries. The taste is fantastic and very similar to the potato french fries. My child loves this celery french fries and of course he does not know what it is :)

Celery cut into the way you cut potatoes for fries. Fry it on heated butter until it gets a beautiful brownish color. Put some salt and a little pepper. And that is that.

Creamy Celery Root Soup

Ingredients:
2 tablespoons butter
1 medium onion, coarsely chopped
2 garlic cloves
1 middle-sized root of celery
2 potatoes
2 yolks
3 tablespoons of sour cream
2dl milk
salt and pepper

These are ingredients, but sometimes I add a carrot or a zucchini. The taste is just fantastic.
Heat butter in a large saucepan over medium heat. Add onion and garlic. Then add a larger cut celery and potatoes. Pour water until it covers the ingredients in the pot. Cook, stirring occasionally, until vegetables begin to soften, about 20 minutes. When vegetables soften puree soup until smooth.
Mix eggs and cream and add to soup. Let it boil. And dilute the mixture with milk. You can also add more milk if you do not want your soup to be too dense. Season with salt and peeper and cook another five minutes.

Tips: Buy fresh celery. You will recognize fresh celery in white color of the root. The damaged and naturally rooted celery contains a substance called furocoumarin, which can be carcinogenic.

And don't forget, the more vegetables you eat, the healthier you will be :)
