Balkan Cuisine #3 - Kiflice with cheese - so soft and delicious

You liked my Cheese pie with homemade pie crust. That's why I decided to write a bit more about Balkan cuisine and dishes in the Balkans and to present to you the tastes and scents of this peninsula.

But before that, I need to make a small introduction.
The Balkan peninsula has always been a link between east and west, European and Asian culture. Throughout the Balkan Peninsula, during the history, various and numerous armies marched. Those from the west - from Europe who wanted to conquer the east, and those from the east -from Asia who wanted to occupy Europe. The various military forces crossed their swords in this area. So the Balkans is a mixture of the influence of the various countries that ruled these peninsula. This turbulent history has left its mark. The impact of these different types of culture is seen in the architecture, the mentality of the people, the religion, the culture, the way of life, the ethnology, folklore, language, literature ...

But the most beautiful and best influence this mixture of cultures left on food. Food on the Balkan Peninsula is an important segment of everyday life. Food is diverse. We like meat and dough in a wide variety of shapes. In the Balkans, there is food that is characteristic of both Asia and Europe, but over time, this food is adapted to this area.

Here is another recipe that is very often prepared in this area - Kiflice with cheese - amazingly soft and fluffy.

Ingridians:

  • 1kg flour
  • 2 dl of oil
  • 1/2 l of milk
  • 2 eggs
  • 1 yeast
  • 1 spoon of sugar
  • cheese
  • sesame and butter and yolk for coating

Preparation:
At first, mix yeast, sugar and 2dl of warm milk until it dissolves. Then, in a bowl put the flour, salt, the rest of the milk, eggs, oil and dissolved yeast and knead smooth dough. Leave dough for 20-30 minutes at room temperature and let it rise until double its size. Mix the dough again and leave it to rest again for about 10 minutes.

Split the dough into 8 equal parts. With rolling pin expand each part, and then cut it into eight parts, as shown in the picture. At the end of each part put a little cheese and roll it. Before baking, cover them with yolk and sprinkle with sesame. Put a piece of butter over each one and leave another ten minutes to grow a little.

Bake at 200 degrees C for about 30 minutes until brown.
