That's interesting that you use the skin and seeds too..
Any time I've made pumpkin bread I only use the meat of the pumpkin..
I've tried roasting pumpkin seeds.. unsuccessfully I might add..
It's just me :-) I like experiencing eating food as whole food including the skin and seeds. If it is not too bad, I eat them anyway because most likely the skin and seeds have more nutrients than the meat.
