How to make stir fried clams.

Ingredients.

  • 500 grams of clam.
  • 1 shallot.
  • Green onion.
  • 4-5 cloves of garlic.
  • 2-3 chilles.
  • 1 ginger.
  • 1 tsp of salt.
  • 1 tbsp of cooking oil.
  • 2 tbsps of rice wine.
  • 2 tbsps of boiled cool water.

Step by step guides.

Step 1:

  • Soak clams with water mixed with a little of salt and chilli for about 3-5 hours to release sand from inside. Then drain and rinse well.
  • Peeled shallot and thinly sliced.
  • Cut green onion into pieces - about 2 inches.
  • Finely chopped garlic.
  • Peeled ginger and cutting it into fine julienne.

Step 2:

  • Heat cooking oil into a frying-pan over medium heat. Add shallot, ginger, chopped chilli, fry well until fragrant. Then add clams, green onion, rice wine, water, salt and stir-fry well until all of the ingredients blend together.

Step 3:

  • Cover the frying-pan with lid, cook over medium heat for about 8-10 minutes for soak up. Continue to cook until the clams are open, place it into a deep plate, pour the sauce on top.
    ps: You shouldn't cook for too long, it will make the clams lose fat.
