Easy Gluten Free Key Lime Pie
Ever wanted a gluten free version of a key lime pie? Look below - very easy (and sorry, I ate a slice already)
Ingredients:
200g GF biscuits - scotch finger or similar
1/4 cup almond meal
1 tbsp caster sugar
100g melted butter
4 eggs, lightly beaten in a separate bowl
395g can condensed milk
2/3cup cream
Zest and juice - 4 limes
Method
Preheat oven to 170°C.
Line base of a 20cm springform tin with some baking paper.
Process biscuits until fine crumbs. Add sugar, almonds and butter, and process until combined.
Press mixture firmly into the base with fingers, smoothing it out as you go, and 2.5 - 3cm up side of tin.
Refrigerate for 20 mins
Meanwhile:
Whisk eggs, zest, milk, cream and juice until smooth
Pour mixture into biscuit crust - it should be level with the crust.
Place on tray and bake for 40-45 mins, or until set.
Cool.
Serve with extra lime slices.
Enjoy with some whipped cream and a cup of tea
