Vegan Strawberry Trifle for Easter 🍓 {Tasty Tuesday}

Hey guys! I hope everyone is enjoying the day. @dksart and I made another trek down to the farm to pick more strawberries today, so I'm a happy gal. They were doing buy 2 get 1 gallon free, so we loaded up big time! It's amazing what one week's difference in time can have on not only the amount of strawberries ripe, but also the taste. Last weeks were delicious, however this weeks are absolutely heavenly! Now I just have to work my way through all of them since this lot will turn faster if I don't put them to good use soon!

Speaking of good use, I rarely make desserts when my family gets together but with all of the strawberries I offered to put one on the table for Easter dinner. The good thing about making one myself is that I can keep it vegan and a bit healthier. I don't mind indulging on occasion, but it is nice when you can make something that tastes absolutely divine without any junk added to it! Between comments and ideas from all my pals on here, a trifle sounded like a fun and show-stopping finisher to the meal. I think this one is a fantastic item to bring to @qurator's Tasty Tuesday party, as well.

I decided to use a recipe from one of my favorite bloggers as a base. Vegan Richa has some amazing Indian recipes in her cookbooks and blog, however I also tend to have really good luck using her baking recipes, as well. I had made this vegan lemon pound cake of hers previously, so I knew it would come out perfectly! I just omitted the berries in the loaf since I was loading up the final product with both fresh and macerated strawberries. I figured two would do the trick!

Another component that totally made the dish was this cashew cream from our very own queen of #fruitsandveggiesmonday, @lenasveganliving. Oh my goodness Lena, I could have just about eaten the whole batch! From just soaked cashews, coconut milk, a splash of vanilla and maple syrup came the most creamy, decadent layer that perfectly complemented the tart berries and dense pound cake. Yes, I licked the spoon when I was done. Don't worry @nickyhavey, I promise I didn't share my spit with my family. 😉

To put it all together I layered half of the pound cake after chopping it in cubes, half of my macerated strawberries (chopped and left in the refrigerator overnight with just a few tablespoons of coconut sugar and a drizzled of blackberry balsamic vinegar), and half of the cream. Then I repeated the layers once more. I tried to make a coconut whipped cream to add on top, but it didn't quite work out how I wanted it to. Instead I sliced some fresh berries, which topped it off quite nicely if I do say so myself. Did you notice how pretty this dish that my friend Julie let me borrow is, as well?

Everyone enjoyed a scoop, but luckily there was plenty leftover for us to savor for a few days, as well. It's just about gone, which is a good thing since I have plenty more strawberry goodies to make in the days ahead! As an aside, that table cloth in the picture below was made by my grandmother for my dad at least 50 years ago! That thing has seen so many family meals that I couldn't even begin to count them.

Of course the sweetest thing of Easter was my little niece. Each holiday is more fun than the previous one as she has finally gotten old enough to start to get excited for the festivities at hand! I don't know who has more fun, though--her hunting plastic eggs and other holiday traditions, or us watching her with love. 💓

This broought back nice memories one of the dishes my Mum would make regularly was her version of Trifle not as Healthy as this of course but it walways dissapeared real quick almost everyone loved it, the almost meaning me she used to add sherry to it and that was a flavor everyone but me seemed ot not mind LOL

Well that's a nice memory! Though I'm sure it would be even nicer without the sherry, right? Haha, that's something I don't think I have ever used in my recipes. I do love my flavored vinegars, though. ;)

MY Mum used to claim to be a tee totaller, but I suspect the regular trifles were an excuse for a sherry or two while making it lOL
We did make one a year or so ago with no sherry and I loved it

Haha, so funny! Ah well, we all have our little vices. ;)

She had so much fun on Easter! It was a blast. That cream really brought it all together. Thank you for that recipe! I'm adding it to the regular rotation for sure! After going and getting so many more strawberries today I think I may just make some of that cream for a simple topper to a bowl of chopped up fresh berries!

I love Vegan Richa's recipes! There are a few of her muffins that I have in the regular rotation. :)

As I just said in my previous comment , raw cake, I have recipe for strawberry cream. It's almost the same as the one I gave, you, only with strawberries. Or you can make cupcakes with this cream on top. I ma sure Vegan Richa's recipes has some good once.

Yum! Sounds delicious! Right now I'm freezing a lot of them so they don't start to rot. They are a lot riper and there was a heavy rain at the end of last week so they are pretty plump. :) I've got a small batch in the oven on low right now to see how dehydrating them works. Would be nice to have some like that instead of all frozen. If only I didn't have to work in between getting in the kitchen then I would have a lot more time to have some fun! ;)

Oh yeah, dehydrating sounds awesome, good idea Katie. And I hear you about having to work, while you just want to get this done! But you will manage anyway, I am sure 🍓

Hmmm strawberries. Miss them so much. One more month till I go to Belgium. Can't wait. In the meantime, we keep enjoying lots and lots of mangoes from the garden. Happy Easter and funny thing, my mom has a similar table cloth from her mom but it's in different shades of blue. Same pattern though lol

Ooh, they should be in season there when you visit, right? I hope you can enjoy some! I wish we could swap out some mangoes for berries because I would love some of those, too. Yep, I'm fruit greedy. ;) I bet the blue is pretty in that table cloth! My dad said when she asked him what colors he wanted he said Autumn ones, so that's what she interpreted them as. I don't know which one of us sisters will inherit it when the time comes, but it's just not a holiday meal without it!

Yep... probably my mom will have some berries hiding in a box in her purse to welcome me on the airport lol. She knows her daughter lol. Oh and I wish I could send you some of those mangoes... they are so good.

The presentation of that cake is amazing. I'm sure it tasted just as good! :)
