Fail: Vacuum sealing potatoes

This is a followup to my post about vacuum sealing to preserve potatoes. This was an experiment that I tried and it failed horribly.

It appears the potatoes off-gassed. Both the cut potatoes and the whole potatoes blew the bags that were vacuum sealed up like balloons.

What's interesting is the cut potatoes haven't changed color, but their texture is mush and there is moisture and extreme amount of off-gassing occurred. These were kept in the dark in a 72 degree room.

So, it definitely appears that this storage method is a giant FAIL. Lesson learned.

@florio, I pressure canned potatoes last month. The pressure canning method works very well. I did some last year and they lasted until this past week when I opened and used the final jar. We love mashed potatoes with garlic and cauliflower and the potatoes only took warming and mashing once I got the cauliflower boiled. You might want to try it. My Ball Canning Book has a recipe. I may do a post on this.

I just was looking for a less labor intensive method that required less resources like fuel for the stove and water for the boiling, etc.

Better to try. And learn now. Than when it counts.

Maybe dehydrate then vacuum seal??

That's definitely an experiment I can try. I did the pressure canning so I was looking for a way that was less work and took less electricity or resources. If I'm going to dehydrate, that's probably similar to the effort of pressure canning.

Yeah, I would say similar effort and maybe even more in electric cost. Keep experimenting..that's the way to learn!
