Deliciously Sticky Pork Kassler Chops with Salsa Salad Fried Basmati Rice - #showcase-sunday
Every now and then I get a bee in my bonnet for pork Kassler chops, but I get really tired of serving it with the same tired sides, plus I always have to consider sides that my little man will enjoy. The entire plate turned out fabulously, and all the flavours complimented one another perfectly. The chops are incredibly simple to do...
Preheat the oven to 200 degrees Celsius, Line a roasting pan with some foil, (you will thank me later lol) and lightly drizzle it with some olive oil. place the chops into the pan and rub the one side into the oil. On the top of the chops, lightly coat them in some sweet chilli sauce, some ground black pepper and then pop them into the oven, slightly above the middle for 35 minutes. While the chops are cooking, boil up a pot of basmati rice - and once that is done, drain it and let the steam dissipate, because you don't want it to "boil" in the pan just now... you want it to fry!
Throw them in the pan and saute them for a good few minutes and until most of the juices have dissipated. Once the rice is ready and the veg are frying nicely, begin to add your rice. Don't add it all at once! That will cool the pan down dramatically and will add too much moisture causing things to "boil". Add it in increments, the same way you would add cheese to a white sauce. At this point, I also added a few freshly chopped herbs...
Once you have added all the rice, allow it to fry for a good few minutes until golden. Add a little bit of potato spice for seasoning, or just salt - if you don't have potato spice. When the rice is finished, you are done! The avo and feta salad, is precisely that - avo and feta. Nothing else! ENJOY!!
❤❤❤
Until next time...

This looks like a great meal, Jaynie. Pork chop is browned like I like it and rice and veggies yummy.
Thanks honey :) It was a tasty dish!
If only I have harnessed my telepathic power.
I would be eating right now.
haha - practice makes perfect they say :)
all looks great
Thanks @doitvoluntarily :) It was pretty darn tasty even if I do say so myself lol :D
So perfect, everything is so perfect:) Avocado and Feta cheese is good combination?I never tried it and we have good feta here:)
omg its the BEST combination!!! One of my favourite sides!!!
I will try it:)
You've gotten the little guy to have a healthy appetite for good food! My boys seem to mostly enjoy food of the deep fried variety. And ice cream. Ice cream is always a hit.
hahaha yeah I have Jude well trained. He cant stand ice cream and wont even eat a single fry. :D Sometimes I wish he would, but I know I should value these habits... long may they last!

Wow, this looks amazing @jaynie :) I haven't had pork chops in so long, I'll have to check them out after seeing this beautiful meal. Love the way you prepared your rice, a great variation. Perfect presentation as always. Have a great week!
Thank you @birdsinparadise :) Kassler chops are fantastic because they are smoked - you should definitely try them :)
Looks yummy! Although I love pork chops, I have a hard time finding really good recipes that don't taste to dry. This looks like a winner and I love the added touch of the way you did the rice.
I will have to tuck that one away. You are doing it right, mama. I had my kids eating everything when they were babies, so nothing every tasted foreign or weird and they eat everything.
Win-win.
Keep those recipes coming! Have a great week ahead!

Well the thing is, these are not regular pork chops - which I agree 100% with you... they are always so damn dry! Kassler chops are smoked and then vacuum sealed in a type of brine, so they are very different... much nicer.
As for traditional pork chops... what I often do is cut the rind off and prepare that separately into perfect crackling in the oven and then I marinade and wrap the chops in foil and slow cook them in the oven. It's a little bit of a long way around, but the chops are always deliciously tender and juicy and you get the perfect crackling to accompany it. :)
