Sunday Healthy Treats! | Caramel Apple Parfaits and Renovation Success!
Winter may be for some birds...but not for this bird my friends!
With Denver’s first fall snow, it was time for this Bird to head south! Much as I enjoyed my grandson, the thought of snow was daunting! it was the first snow for my grandson, another “wow” moment for sure! He wasn’t sure what happened to that bright yellow truck last seen in the back yard, lol Everything was now covered with a thick blanket of white. They’ll have so many new adventures this winter…time to buy boots and warm winter clothing. Such fun times!
Meanwhile, back at the Bird’s nest…
Mr. Bird was busy working on his latest renovation project. By the time I got home we had just a couple of days left to finish the fireplace. Laying porcelain tile is time consuming, and must be done right the first time. With ceilings 11 feet tall, it’s quite a project.
Did I mention fall is in the air?
Boy, it really feels like it, cooler in the evenings but still warm during the day. Pumpkins are beginning to pop up everywhere! When I think of fall, I think about Pumpkin and Apple Pies! How about you?
We had a renovation project to finish today...
so breakfast prep started just before bed last night. I knew Mr. Bird had been working very hard while I was away. Even though I leave meals for him, he often forgets to eat when he's consumed with a project. Sound familiar at your house? I thought a special fall breakfast would be a nice way to start the day. I prepared Chia Pudding by mixing ¾ cup Almond milk with ¼ cup of Chia Seeds in a small bowl. I added 2 tbsp. Maple Syrup and 1 tsp Vanilla and gave it another stir. Into the fridge overnight!
Chia pudding is so versatile…
serve it with just about any fruit you enjoy. Of course adding cacao is also amazing if you love chocolate pudding! Not only is chia packed with protein, it contains more calcium than a glass of skimmed milk. And, by using Almond Milk you'll have a protein packed yummy breakfast parfait! I grabbed my favorite Granny Smith apples and set to work. I love the tart; slightly sweet taste Granny Smith apples have don’t you?
Walnuts and dates anyone?
While I sautéed the apples with a tablespoon of coconut oil I chopped the walnuts and pitted the dates. I remember gathering walnuts in the fall with my grandparents oh so long ago. My grandfather loved to crack them open and feed them to us, fond memories for sure.
6 Dates…
were gently pulsed in my food processor along with 3 tbsp. almond milk and a teaspoon of vanilla until smooth. Oh, it tastes just like caramel! Combine the caramel and walnuts with the apples and stir. Yikes, I almost forgot the cinnamon! 1 teaspoon was a just enough! At this point the house began to smell heavenly. Looks like we’re ready to make breakfast! Layer it up! Coconut Yogurt, more walnuts and Caramel Apple….oh my!

We were energized after this breakfast. In fact we were able to finish our project, success! A little bit of tile makes a big difference.
We’ll take a few days off for now, although of course there are more projects on the horizon for the Birds! I’ll be sure to share! Are there projects like this going on in your world? I would love to hear about it!

I love the composition of your pictures! That parfait looks so delicious. I really got to try making my own! We don't have a fall season here in Malaysia but I have experienced it before when I was studying in uni for a few years. I do love this time of the year. Just the way everything in nature changes and preps for the winter. Oh did I mention that I like pumpkin too?? 😋😁

It is just crazy some are already getting snow.
I do miss that smell of Fall in the air. We don’t get that down here. Just people looking at me for wearing shorts!

That parfait looks delicious. And I would be thrilled with that renovation. It looks fantastic. Tell Mr Bird that when he's done, I'm sure The Husband, aka Farmer Brown could use a hand, here! lol

This is why I've gained 20 pounds in the last two months.
Okay, slight exaggeration. It's taken me 20 years to put on 20 pounds, but it's because I love looking at pictures of beautiful parfaits. Apples, caramel, walnuts ... some of my favorite things. Now I need to eat a carrot so I don't feel so guilty. Thanks!
Mr Bird's project turned out real nice! We're not looking forward to those hot and humid summer days and nights, much prefer winter time as ours is mild. That parfait looks delicious Mrs Bird!
