Healthy Treats | Key Lime Tasty Tarts
The Bird’s Nest will be busy with family over the next few weeks!
That means I’ll need to start preparing healthy treats! I’ll have more to share with you my friends! We have so many fresh fruits and vegetables available it won’t be difficult to come up with something they’ll enjoy!
Fresh Key Limes were available at the market today so it sounds like Key Lime tarts will be on the menu!
Did you know Key Limes are actually very healthy for you? They are! In fact 1 ounce of juice contains 15% of the daily required Vitamin C. We all know Vitamin C works to fight infection, build collagen for your skin and hair and contains soluble fiber which helps maintain blood sugar levels. Soluble fiber also helps lower blood pressure and eliminates LDL cholesterol! Best of all, Key Limes taste great! Summer drinks, ice cream, tarts and even cookies, this fruit is so versatile
It all starts…
with limes!
Tarts and Stuff
- Gluten Free Graham Crackers (1 pkg)
- Non-dairy Butter (¼ cup)
- Raw Cashews (1 cup)
- Whole Fat Coconut Milk (1/4 cup)
- Coconut Oil (1/4 cup)
- Fresh Key Lime juice (1/3 cup)
- Zest of one lime
- Organic Maple Syrup (1/2 cup)
Note: Don’t forget to soak the cashews overnight. Then just rinse and drain before using!
It doesn’t take…
Much time to make these little gems! Pulse the graham crackers in your food processor until they’re finely ground, add the melted butter and pulse again until everything is mixed well. Press this mixture into paper muffin liners and bake at 375 degrees for 8 minutes!
While you bake…
zest and juice!
We’re almost done…
Place the remaining ingredients in your blender and blend, blend, blend! Make sure you taste it! You’ll be glad you did! I made sure this was creamy and smooth as silk before pouring it over each of the muffin crusts! Into the freezer for couple of hours and you’re good to go!
Voila! Key Lime-ilicious! Tart, sweet and oh so refreshing!
One treat down, more to make! Oh, by the way, this also makes a great pie! I thought individual tarts help with self-control, lol! Stay tuned, I’ll be sure to share!

Oh yum!! Suddenly feel for the inceedible explosion of aroma that comes when zesting limes. 💚 Limes are such an integral part of Thai life & Thai cuisine... lovely to see them being celebrated.
