Recipe 1: Stuffed Artichokes - A Traditional Maltese dish

As a kid, I was never choosy about food. I never said no to anything that was put in front of me. Vital lessons learnt from my parents and also growing up in the local Scouts group. You eat what you get and you say thank you.

Luckily for me my mum is a star in the kitchen. Her broths, meals and dishes were never disappointing. Even a simple pasta turned out special. My gf @rooddzy calls it TLC. Yup must be true :)

Artichokes are starting to appear in our local markets. Even though they are still expensive and rather small, I couldnt hold myself not to buy some for lunch today.

There are various recipes online and most of them involve cutting out all the leaves, leaving the heart of the artichoke. I cannot believe why such a waste. The meat from each leaf is delicious :D

Organic fresh green garlic brings a different taste to the dish. It is not as strong as the traditional garlic yet it brings a different taste to the dish.

Cooking is very simple. Chop a big bunch of parsley and fresh green garlic and mix into a bowl. Place some potatoes at the bottom of a big deep pan. Grab the artichoke from the stem and slam them face down on the chopping board. This will loosen the leaves and allows you to stuff it with the chopped greens.

Place everything in the pan and submerge to half of the artichoke. Put it on a flame and boil for 20mins, then put down the flame and let it simmer.

PATIENCE


This dish usually takes 2 hours on low flame. My mum always says, the longer you cook it the better!

Eating


The artichokes once cooked properly will fall off with a very gentle pull. Grab the leaf from the top and scrape the meat with your teeth. We always keep the heart for last, it is the best piece on the plate!
