Ingredients

Brownies:
1/2 cup (1 stick) butter, softened
1/2 cup oil
4 eggs
2 cups sugar
3/4 cup cocoa powder
1 cup all-purpose flour
2 teaspoons vanilla
1 teaspoon peppermint extract
1/2 teaspoon salt
1/2 teaspoon baking soda
2/3 cup chopped semi-sweet dark chocolate or chocolate chips
Avocado Cheesecake Filling:
1 (8 ounce) package cream cheese, softened
1/2 cup sugar
1/4 cup mashed ripe avocado *see note
1 egg
1 teaspoon vanilla extract
1 1/2 teaspoons peppermint extract
pinch of salt
Instructions

Pre-heat oven to 350 degrees F (180 C) and grease a 13x9 inch baking dish or pan.
Cream butter and oil with sugar in medium mixing bowl. Add eggs, extracts, salt, and soda. Stir in flour and cocoa powder followed by chocolate chunks.
Pour half of batter into prepared pan and smooth with spatula. Place in oven and bake for 10 - 12 minutes until until top is light brown. While that is in oven, beat cream cheese and sugar together until completely smooth, add avocado and egg and stir until combined. Add salt and extract and mix until smooth.
Remove pan from oven and pour cheesecake filling on top. Smooth with spatula and then pour remaining brownie batter over top and use a fork to make swirls. Bake for 25 - 30 minutes until toothpick comes out clean.
Cool completely and cut into squares. I recommend chilling in refrigerator before serving.
Notes

*For the best color when using the avocado, use a spoon to scoop from the outer edge closest to the skin where it is dark green.

Hola, Yo hago recetas sin gluten, por que tengo un negocio dedicado a esa alimentación, Te digo que puedes sustituir por Harina de arroz que le queda muy bien, sin embargo, recuerda que en cuanto a textura y esponjosidad no te va a quedar igual por las propiedades del gluten. Un tip bate las claras a punto de nieve

Let me just say I "Love" chocolate & mint, specially when it is chilled. omg. These brownies look and sound scrumdidlyumptious, I am eager to dawn an apron and whip up a batch.
