Here is the recipe I used.

Ingredients:
1 C coconut oil
2 large eggs
1 C almond flour (I used almond meal)
1 tsp paprika
2 tsp garlic powder
½ tsp salt
½ tsp black pepper
½ tsp thyme
1 tsp chipotle powder or cayenne pepper
2 pounds chicken
salt and pepper

Instructions

Preheat oven to 400F.
Heat oil in a large frying pan.
Whisk eggs in a medium bowl.
Combine all dry ingredients in a large bowl, and mix well.
Season your chicken with salt and pepper.
Dip chicken in whisked eggs.
Then coat/cover chicken with dry mixture, and place in hot oil.
Allow both sides to brown.
Place drying rack on a sheet pan and assemble chicken on the rack so there is space between all pieces.
Bake in oven for 20-25 minutes.
