It has vitamins A, E and K, calcium, magnesium, is a rich source of iron, high in antioxidants, has lots of fibre, and all 9 essential amino acids....and likely more beneficial even than that. We eat it fresh in salads, juiced, in tea, or dried as a superfood powder. I've also used it to make kombucha. So far every year that we have cut it to the base for the winter it has come back! A very simple way to get your power packed nutrition.
