Beneficios para la salud de la lechuga
La lechuga es un alimento alcalinizante, refrescante, remineralizante.
- Tiene cualidades hipnóticas, que ayudan a conciliar el sueño, y también analgésicas frente al dolor. Presenta propiedades calmantes sobre la excitación nerviosa.
- Posee una acción aperitiva, estimulando las glándulas digestivas, así como una suave actividad laxante por su contenido en fibra. Debido a que drena el hígado, ejerce una acción depurativa general del organismo.
- También posee propiedades hipoglucemiantes (reduce el azúcar en sangre), lo que hace aconsejable su consumo por los diabéticos.
- Como es rica en betacaroteno, contribuye a la prevención del cáncer, especialmente de colon y pulmón.
La lechuga en la cocina
Actualmente encontramos lechuga todo el año, pero su momento óptimo empieza en primavera y en algunas variedades se alarga todo el verano.
Aunque en nuestro país la tomamos básicamente cruda, también puede utilizarse para elaborar cremas y sopas. Incluso salteada o hervida resulta sabrosa. La ventaja de comerla cruda es que sin cocción conserva mejor sus propiedades nutricionales.
- La lechuga despliega sus virtudes en mil y una ensaladas. También puede emplearse como ingrediente de bocadillos, pitas, crêpes o burritos.
- Además da mucho juego para elaborar cremas vegetales, tortillas, rehogados, salteados y algunas variedades, como las pequeñas y acogolladas, pueden cocinarse enteras a la plancha, al vapor o braseadas.
- Sus hojas se pueden rellenar de arroz, carne o pescado, simplemente escaldando o friendo las hojas enteras.
Cómo aprovechar bien sus nutrientes
Aunque el aporte nutricional de la lechuga es considerable, no siempre llega íntegro a la mesa. Tener en cuenta los siguientes puntos es imprescindible si se desea aprovecharlo al máximo:
- Comprar lechugas en buen estado. Una lechuga con manchas, con hojas rotas o que esté en cajas demasiado llenas, puede no tener la calidad adecuada.
- Elegirlas de temporada. Hay lechugas todo el año, pero su temporada arranca en primavera. Las bolsitas de ensalada preparada son una buena opción, aunque no tienen el mismo valor que la lechuga fresca.
- Conservarla bien. La lechuga debe guardarse en un lugar húmedo y fresco, al abrigo de la luz y el aire. En la nevera se aconseja dejarla en el cajón de los vegetales. No hay que juntarla con manzanas o peras, pues se altera antes. Tampoco debe congelarse.
- Evitar los remojados prolongados, pues se pierden en el agua gran parte de sus minerales y vitaminas.
Aprovechar las hojas más verdes.
- No cortarla en exceso.
- Prepararla poco antes de comer.
- Aderezarla con zumo de limón o vinagre. El ácido cítrico y el acético tienen un poder conservante que preserva las vitaminas.
