This is my first entry to @maryfavour's Foodie Friday #5! In this we are supposed to share in a post whats for dinner! This recipe feeds around 4 people. So without further ado...

Baked Chicken Fajitas and Homemade Pintos

Pintos

1 lb. of pinto beans

1 whole onion sliced

1 packet of Sazon Goya

kosher salt, to taste

1. Add pintos to a large pot, filling with water.

2. Add sliced onions to pot.

3. Stir in packet of Sazon Goya.

4. Bring to a full boil, then reduce heat to low, cover and allow to simmer for 2 hours or until beans are tender.

5. Once beans are tender add salt to taste, I use around 2 Tbsp.

Baked Chicken Fajitas

1 Lb. of boneless skinless chicken breasts or thighs

1 med. onion

1 green pepper

4-6 mini sweet peppers

3-4 cloves of garlic

4 Tbsp olive oil

2 1/2 tsp. chili powder

2 tsp cumin

1/2 tsp oregano

1/2 tsp each kosher salt and pepper

1. Slice green pepper, sweet peppers and onions in to strips about 1/2 an inch wide.

2. Smash and mince garlic.

(Just a little tip- Grap a bowl to put all the scraps into so youre not having to go to the trash can over and over!)

2. Add vegggies and galic into a large bowl.

3. Slice chicken into strips the same size as peppers and add to bowl.

4. In a small bowl or measuring cup add olive oil and spices. Mix well and pour over the top of meat and veggies. Mix well and fully cover all pieces. Cover with saran wrap and places in fridge to marinate for 30 minutes to 2 hours. (I always so for that 2 hour mark to ensure great flavor.)

5. Preheat oven to 400 degrees.

6. On a large baking sheet add a piece of foil for easy clean up. Scatter chicken and veggies evenly on pan. Bake in oven for 30-40 minutes, or until chicken reads 165 degrees, giving it a stir halfway through.

You can eat this just as it is for a super healthy meal or you can toast up some delicious corn tortillas. Pair it with some fresh toppings of chopped onions, cilantro, guacamole, lettuce, cheese, tomatoes, jalapenos or salsa. We are doing simple chopped onions and cilantro, a little jalapeno and guacamole salsa! Deeeeelish!!

Looks real good. have you ever tried small chopped up carrot pieces in your pintos, they add a different kind of flavour and texture, plus our little chihuahuas like their cooked carrots with a couple of the beans.
