My second entry into the #macrophoto-contest features Micro Red Amaranth. Although it is one of the lesser known microgreens, it’s popularity amongst chefs is increasing.
Amaranth is native to Peru and was domesticated at least 6000 years ago, however, the micro version was created in California sometime between 1980 and early 2000s. Its appeal lies in it’s vibrant and distinct fuchsia hues and is used mainly as a garnish, increasing the aesthetic appeal of a dish. Its mild earthy flavour makes it versatile for both sweet and savoury dishes.
