Massa de Pimentão ( Portuguese marinade )

Ideal for seasoning meats that will then be stewed or roasted, especially pork. Because its high salt content, it is advisable to use it in small quantities, depending also on the size of the piece that will be cooked.

Recipe for tm5

Ingredients:

– 1 kg of Red Peppers
– 300 gr of salt
– 100 grams of Garlic
– 600 gr of water
– Vinegar
– Olive oil
Preparation:

  1. Water + Peppers( clean the seeds)+ a little Salt – 20 Min / 100º / Reverse / Vel. Spoon

  2. Strain the peppers (you can reserve the cooking water to make a rice)

  3. Peppers + Garlic + Salt + Splash of Vinegar – 40 Sec / Vel. 8

  4. Place in sterilized jars and a dash of olive oil on top to conserve.
