Know Filipino Food: Isaw (Chicken Intestines BBQ)
Isaw is a popular street food in the Philippines. It's part of our street barbecue culture. Filipinos barbecue almost every part of chicken and pork. Even the blood and the innards, this is one example. Isaw is chicken intestines. We clean it well, have it put in boiling water and let it simmer for about 5 minutes. It is then seasoned and marinated for about 30 minutes to an hour. We use bamboo barbecue sticks as skewers and we then grill it over burning charcoal.
It's really time consuming to prepare isaw but people here love it. It's tasty and all chicken meat. We just eat it as it is, like BBQ but we also pair it with rice for a lunch or a dinner. Odd, but that's how it is here. A stick of isaw costs just 5 Pesos, imagine how cheap that is. 1 USD is equal to 50 Pesos, so in a dollar, you will have 10 isaws.
