Low Carb Tortilla Recipe (Keto) - Make your own extremely low carb tortillas with cheese and cauliflower! All of your ketogenic taco toppings will stay put on these wonderful tortillas.

Tacos, in my humble opinion, are the ideal food.

carbohydrates, piping-hot meat with seasonings, cool vegetable garnishes, sauce, and of course cheese and/or sour cream... Why not adore it?

But what if you must avoid grains in your diet or follow a low-carb diet? Are tacos forbidden? (Please, God.)

Even though we do not strictly adhere to a keto or low carb diet, we have many friends who do, so it is always wonderful to be prepared for them when they visit.

For my daughter Ava, I recently experimented with grain-free tortilla recipes. Although she can't tolerate grains well, she still has a teen-like craving for carby hand-held foods.

I decided to try making tortillas using cauliflower after trying out a number of recipes that avoid all of her dietary sensitivities.

After all, cauliflower may be used to make delicious grain-free rice and crackers. Why not tacos.

This Low Carb Keto Tortilla Recipe came together well with the addition of cheese, eggs, and seasonings.

The tortillas made from cauliflower are robust but flexible. They have the most amazing flavor. The best part is that they work well with a low-carb ketogenic diet.

Since they are the most adaptable and flavorful within the first hour or two after baking, we love this Low Carb Keto Tortilla Recipe right out of the oven.

(I find that most cauliflower recipes don't make well-prepared meals.)

The Ingredients You Will Need

-Raw Cauliflower (about 1/2 a large head)
-Shredded Cheddar Cheese
-Large Eggs
-Salt-
-Garlic Powder
-Onion Powder

-How to Make Low Carb Tortillas

1- Bake your baking sheets with parchment paper and preheat your oven.

2 - Cauliflower should be roughly chopped and processed in a food processor until it resembles coarse crumbs.

3- Add the other ingredients to the food processor and process until the dough comes together and the mixture is smooth.

4- Place portions of the tortilla dough on the baking sheets with a cookie scoop, leaving space between each chunk for rolling out the tortillas.

5- Wax paper should be placed on top of the portions you created, and then the portions should be rolled out into flat tortillas until they are about 4 to 4.5 inches in diameter.

6- After 12 minutes, or until the wax paper is golden brown, remove it from the oven.

7- The baking sheets should cool for the parchment paper should be peeled off after three to five minutes.

  • Low Carb Keto Tortilla Recipe Tips

This recipe couldn't be more basic. However, a high-quality food processor and rolling pin are required. Items I discover some new cooks lack. No matter how strong, a blender cannot produce the same grind.
Cauliflower should be processed in a food processor until it resembles rice. The remaining ingredients are then pulsed in. This guarantees a uniform mixing.

Scoop out portions of the "dough" onto a baking sheet that has been prepared. Your tortillas will all be the same size and shape this way.

CAN YOU FORMAT THEM LIKE CRISPY TACO SHELLS AND FRY THEM?

Not in the deep fryer I wouldn't. But you could bake them into the desired form. To construct the taco shells, either use a taco shell oven rack or a rack made of foil.

DO I NEED A SKILLET TO MAKE EVERY LOW-CARB TORTILLA?

The tortillas can be shaped and cooked in a skillet over medium heat. Cook each side for 1-2 minutes.

WOULD DEFROSTED CAULIFLOWER RICE WORK WITH THIS?

Yes, provided that it is thoroughly rinsed and dried off before being placed in the food processor.

WHEN DO THEY STOP BEING FRESH?

I do not suggest making these tortillas ahead of time and storing them in the refrigerator because they are typically at their finest an hour after being made and do not freeze well.

OTHER FLOUR SUBSTITUTIONS

You can also experiment with coconut flour, sunflower seed flour, or tortillas made with almond flour.
