This shop can enjoy traditional work that respect tradition even in the work of Edo front.

こちらのお店は江戸前の仕事の中でも伝統を重んじた昔ながらの仕事が楽しめる。
なぜなら大将の渡部さんは湯島の「一心」で修業された方だからです。
「一心」は握りの神様と言われている加藤さんがいらっしゃるお店。
渡部さんもこの加藤氏に教えを請いたとか。

お店は銀座5丁目のビル3階。
非常にアクセス良好!
店内は7席のカウンターと2席の個室があった。
個室からカウンターは見えないため大将の仕事が見られません・・
個室があるとは知らなかったためカウンターに通されて本当によかった!

まずはビールで杯を乾かす!(乾杯)

苦手なものはないかと聞かれます。
大将は一見かなり頑固おやじのような見た目・・
しかし気さくで全く怖くありませんでした!

ではさっそくスタート!
こちらの構成は先述した「太一」とほぼ同じ構成。

つまみ数種→握り10貫程度

まずはつまみ→

・お造り2,3種:柚子塩で頂く

・〆鯖:炙りはなし。辛み大根でさっぱりと頂く!

・ふぐのお刺身:もみじおろしと青ネギをふぐで包む!なんとも贅沢な一品。

・雲丹いくら:この魚卵コンビはただただ旨い

他に2,3種ほどだったかな、、?

ちなみにガリが最近のやや甘めなものとはことなりキレがかなり感じられる!
渡部大将らしいガリでした!

そしていよいよ握りへ→

・烏賊:こちらは柚子塩!柚子皮はもちろん削りたて。

・光物:鯵や鰯などだった気が(忘れてしまいました・・)

・海老:温度はやや冷え気味?しかし食べてみると甘みがいっぱいに広がります!

・コハダ:酢加減、〆加減強め!好きな人はかなり好きだと思う!

・穴子:文句なし!ふわっふわ系でツメは甘め!これまでの渡部大将の構成からツメは甘目でないと予想していたがいい意味で裏切られた!!

他に鮪や貝などなど

ここまですべてお店主導ですべておまかせ!

お腹がすいていたためもう少し食べられそうだった笑

私は大好物の・・
「煮蛤」をオーダー!!
しかし本日はないとのことでしたのでまた次回リベンジ!

結局
トロたく巻とかんぴょう巻を追加しちゃいました!

・トロたく巻
 たくわんはかなり細切りで1mm程度だろうか。しゃくしゃくしたたくわんの食感が好きなため、あまりその食感は楽しめないかなあとちょっとへこみました、、ですが食べてみて全然!トロの脂とこの細切りたくわんの食感がベストマッチ!

・かんぴょう巻
 山葵を入れるか聞いてくれます!もちろん入りで!干瓢は甘さ控えめでやや硬めの弾力で非常に美味しい!〆には最高です

最後に・・・
お会計を見てびっくり!!

おまかせコース+巻物2本追加+ビール+日本酒3合

こんなに頼んで18,000円くらい!!!
人気が出る理由もわかります!

そしてまたまた最後に・・・

2番手さんが外までお見送りしてくれましたが、なんとお土産がーーー

手作りお稲荷さんをくれました。
明日の朝ごはんにと。
なんて素敵なお店なんだと最後の最後まで実感!!!
