My Recipe For An Amazing Yam and Egg Sauce: How To Weekly Contest
Hi everyone,
So today yours truly won't be telling any stories, neither will I be weaving any words into poetry...
Instead, today i want you all to salivate, so I'll be teaching you how to prepare my second favorite meal; Boiled Yam and Egg Sauce!
Now before some of you run away saying "I don't have yams in my country", well if you don't, then potatoes would work just fine. But I'll of course be delivering this tutorial based on yams.
So walk with me....
First, our ingredients...
- A tuber of Yam
- A few eggs (to taste)
- A few seeds of fresh tomato and chilli pepper (preferably not too soft tomatoes)
- Onion (to taste)
- Salt and seasoning (to taste)
- Groundnut/Vegetable oil
- And of course, water and your cooking utensils....
So what are we waiting for? Here's how to.....
Cut out a few pieces of yam, preferably to your satisfaction.
Peel the hard skin off the body of the yam, and cut the yam in square shapes, or whatever shape you like (square works for me).
Wash the square shaped pieces of yam in a bowl of clean water.
Place the washed pieces of yam in a pot, add a little salt, and a suitable amount of water, then allow to boil until its cooked (usually between twenty five to thirty five minutes). Note: some may wish to add a little sugar to the yam while boiling, but for me it takes away the natural taste from it. That being said, now let's carry on...
While the yam is being cooked, crack the eggs, and pour the contents into a clean bowl.
Slice a suitable amount of fresh tomato, onion, and chilli pepper (to taste), and pour in the bowl containing the egg yolk.
Add a little salt and seasoning (to taste), then stir/mix until the egg yolk looks smooth.
Bring down the cooked yam, and sieve out the remaining water from the pot. Make sure there is no water left with the yam in the pot. Alternatively, remove the yams and place in another clean pot.
Place a small pot or a frying pan on your cooker, and allow to dry. Then pour just a tiny amount of groundnut/vegetable oil in it when it's hot. Preferably the oil shoukd be no more than two scoops from a large cooking spoon.
When the oil is hot enough, stir the egg mixture again, and then pour into the pan.
Use a fork to stir the eggs as it fries, so that it has a scattered look. Plus it will allow every part of the mixture to fry properly.
In about a minute or less, your egg sauce should be ready.
Serve into a plate with the boiled yams, and enjoy...
