Have you ever grown Radish in your garden only to forget to pick them early enough for the roots to be optimally delicious?
When they grow for too long they get very woody and lose their distinctive flavour.
Well, don't pull them out to consign to the compost heap just yet.
You can let them continue to grow until they begin to produce dainty little flowers.
Flowers that are edible and make a nutritious and colourful addition to any salad.

Sometime after the flowers begin to appear, the plant no doubt having sprawled all over your garden, small green pods will begin to grow. These will swell into sizable, bulbous and, to start with, rubbery feeling seed factories.

If you enjoy the taste of Radish root then you will find little to no difference when eating these seed pods.
They are best eaten raw just like fresh peas but you can cook them into dishes such as stir-fries and curries.
Our two-year-old loves "Bicy" (Spicy), as she says, straight off the plant and so do we.

Be careful though as similar to the root if left too long they will grow woody and lose their flavour.
In the picture below the pod on the far left is at optimum eating. To the touch, it feels soft and rubbery and can easily be bent side to side. Conversely, the pod on the far right has toughened up to the point that it tastes a bit like eating crunchy cardboard.

As a basic rule if the pod feels hard to touch and has changed colour from a verdant green to green-white or with ruddy orange spots and splotches then it is not worth eating. Best to leave it on the plant to grow seed that you can harvest in a month or so.
In the picture below you can see the cross-sections of a pod that is not good to eat, on the left, and one that is perfect, on the right.

Last season Capt'n decided to try and pickle a bunch of pods, an experiment that worked well enough although a few things were learnt. Mainly that older pods should stay on the plant. Also, he boiled the pods before pickling them and this caused a significant loss of flavour. So this season he has tried a different approach.

Picking all of the young and supple pods to be found then washing them in cold water Capt'n prepared a jar and other ingredients. Measuring out enough pods and apple cider vinegar to fill a jar he also added fresh chopped garlic, whole pickling spice, salt, black pepper, cayenne pepper as well as some homegrown mustard seeds and poppy seeds.

Pouring the vinegar into a pan and quickly boiling it Capt'n then poured it back over the jarred mix and sealed it with a lid.

Now the jar will sit in the pantry for at least a month to mingle before we can see how well this seasons experiment has worked.

What a cool post @piratefoodco. I had no idea you got a few second chances with radishes, in terms of eating the flowers and/or the pods. Your description and photos of when is best to harvest the pods is great. I also like that you're experimenting with preserving them. I look forward to an update in the future about this.

Thank you for your kinds words and vote of confidence. As it is summer here in New Zealand we have been very busy with our business and garden so our social media interactions have been limited. It certainly is, however, a boost to our confidence to gain some traction with a simple sharing of our garden knowledge. We did become a bit disenfranchised with steemit for a while as it just seemed like a waste of time to spend a few hours making a post just to see it sink out of sight in an onslaught of 'vote for ME' and 'I want to make money' posts that would garner mass support. Still, it takes more than one or two waves to sink this ship. While we cannot promise to be regular with our content you can be assured that it will be the best we can make it. We have always believed that quality over quantity is something to strive for in all aspects of life. Especially when it comes to food. Because 'Ye ARRR what ye eat.' :)

Yeah it's a tough gig at times. There's a lot of shit posts on here for sure. There are people actively seeking out the good quality, undervalued posts though. Unfortunately, you do have to make an effort to find them, which many people aren't (either cos they don't know how, or they don't have time).

Hello Ana. Thank you for your comment and kind words. As you are new here to Steemit we would like to throw you a few hints. First of all, it is considered a bit of a faux pas to ask for people to vote and follow. It's a bit like walking into a pub, going straight up to a group of strangers and yelling at them. "Hey. You should be friends with ME!" It's the kind of move that will probably make you few genuine friends. Secondly, if you are here on Steemit just to make money then you will have to produce some content that connects with people on the deepest level. And even then it will be an uphill struggle for a while. In all honesty, this is our most popular post to date and we have been making content on and off since June. Eating the flowers and pods is a new one to me. Thank you!

There are many edible flowers. Our most frequently eaten are Violets, Calendula, Pineapple Sage and any of the Brassicas (Cabbage, Cauliflower, Brocioli) :)

I usually tell people about eating day lilies and nasturtiums. You can eat every part of a day lily including the tuberous roots. Nasturtium leaves and flowers taste a bit peppery like radishes.

Ah yes. Nasturtiums are brilliant. Unfortunately, we forgot to plant any this year and only one plant had appeared from last year so our supply is limited. Daylily is new to us. Will check it out. Thanks for the info.

We're a world away from each other yet we have all of these flowers in common.
