Our Very First Duck Egg

This past weekend was a big one for sweet little Sammy the white duck. She laid her first egg. I felt so bad for her. I noticed her walking more slowly than normal and she seemed really reluctant about going back into her pen that night. I think it freaked her out. Since Friday we've gotten three eggs from Sammy.

The first two eggs were small as chicken eggs. They were in random spots in Sammy's pen. The third one laid today was a big old thing! It looks like this time she actually made a nest in the hay I have in the bottom.

It's pretty awesome to finally have eggs. I didn't think any of my four ladies would make eggs before it got cold. I'm happy to finally have fresh, free range eggs. The ducks live a good life roaming free around our yard. It's cool to see one producing eggs so we can have fresh food produced on our "homestead."

I gave one of the eggs a try today and it tasted like a chicken egg. It looked a lot better though. It had clear whites and bright yellow yolks. It was the prettiest egg I've ever seen to cook. Bright colors. Not like store bought chicken eggs. They have cloudy yolks and lighter yellow yolks. It'll be fun baking with them once I have more eggs. They are suppose to be richer and wonderful to use in baked goods.

Wow congrats @maxrab for sammy has laid three eggs. I was wondering y was first two eggs smaller than the third one but hope third egg size should be same for all from now.I hope u enjoyed the egg in ur dinner .thanks for sharing this post as we love sammy too.

Congratulations! That looks like a potential omelette! Somewhere, I heard a famous chef talking about how to cook an egg to bring out its full flavor potential. I can't remember where...

When I lived in Spain, every grocery store I went to had quail eggs for sale. I found that chef's spiel, when I was trying to figure out how to cook them. In the end, it was easier (and cheaper) to use chicken eggs because quail eggs are tiny and I didn't notice a significant flavor difference. It'll be fun to get your opinion on duck eggs.

Great to see them finally paying back. Wonder if kids do that eventually?
