Making Dried Apples
Today has been a proper homesteading day here in the countryside. We have apple trees and the harvest is plentiful this year, but one can only eat so much apples as they are. I am a huge huge fan of dried apple slices, and you can't even buy the kind I like, they have to be home made. They can't be too thick, not too soft, and not all the way dry like a chip either, just perfectly nice and chewy.
We have this handy dandy little tool that simultaneously takes the core out and coils the apple, and takes the skin off too if need be. This tool makes the dried apple process so efficient that it's a joy really. It doesn't take long at all to pick sweet apples, these ones are called Red Cinnamons, run them through the machine, then cut right through to get rings, lay them all flat into a baking tray, and that is all the active making it takes. Then they will dry for about a day and a half in the boiler room where the temperature hangs comfortably around 40 degrees Celsius.
My mom has had the apple drying business up and running for a week already, having one big batch drying at all time and the next one ready to go as soon as the previous one is done. I am gonna have a shocking amount of dried apples for the winter!

I have been picking my strawberries and raspberries, to make jelly.
Also, picking blueberries, and beach plums that grow along my street, and neighborhood. Also for jelly.
You really like jelly I see. I hardly ever have any jelly or jam(are they the same thing?) but I like to have berries frozen as they are so there is a lot of options for what I can use them for.
So, frozen berries, are great. sometimes I use them in foods I cook. Sometimes I cook them down for syrup on sauces.
Jelly and jam are slightly different.
Jelly is made only from the juice of fruit
Jam is made from juice, and from the flesh.
I actually don't eat Raspberries, but my wife and 2 daughters love it... so, I make Raspberry Jelly for them. Also, I use the Raspberries for Making Raspberry Liqueur.
I don't but my grandma loves making jam, so we got so much jam loaded in our refs! :D
Hrmmmm.... I usually use a dehydrator for my sliced apples.
I guess is basically does the same thing, a little heat and lots of dry air.
I might make a batch this weekend if I have the energy.
Do you usually eat them as is, or do you re-hydrate them?
Yeah basically the same thing but unneccesary here where there is a dry hot room already in the house 😁 Have you ever spiced your apples in any way? I was thinking I might need to try some time.
Ewwww wtf, re-hydrate them, that sounds disgusting! The best thing about the dried apples is the texture, it’s so pleasing to snack them.
I like them one of three ways ...
plain.
cinnamon and lemon juice
pseudo pumpkin pie spice (cinnamon, nutmeg, allspice, etc)
But usually, just plain.
If you like porridge, chopping up some dried apples, then adding to the fry mix while you pour in the water, then waiting while the two get soft and squishy, with some cinnamon and brown sugar works for me.
I’m a bit intrigued by the pumpkin spice mix, maybe it’s the basic bitch in me who wants pumpkin spice latte. Never tried that one though and we don’t have Starbucks here.
Phew, now you are making some sense, it could totally work in porridge. I was thinking that by re-hydrading you would put them in water for a while and them just eat like that. I was seriously concerned for your mental health.
This might tie in with your basic bitch pumpkin spice need...
Instead of drying them all, take one small batch and preserve them in rum - with the pumpkin spices. (As long as these apples hold their texture)
On a cold dark day, make yourself a hot buttered rum , then garnish with a rum soaked apple and a cinnamon stick.
Or mulled apple cider ... you get the picture.... then, hopefully, we'll get the pictures.
