Fermented Beverages and Foods - Kombucha, Sauerkraut and Hot Peppers

Yesterday was a busy day for me in the Daddykirbs Kitchen!



The Daddykirbs Garden provided some fresh hot peppers (no photo) and some sweet peppers of different varieties (shown below). Typically my family doesn't eat a lot of peppers, so I use the hot peppers in a fermented mash to make hot sauce.

Sauerkraut


Another blessing was the gift of cabbage! @katedansyng was over at the house for the Saturday Morning YouTube Live Show and she brought gifts! She has an excess of white cabbage and Orange Bell Peppers. The cabbage was used to make 3 quarts of white Sauerkraut. The Red Kraut was made a few nights before using cabbage that I had purchased at the local grocery. You can see the white and red kraut in the first image on this post.

Kombucha


Since the kitchen was already getting messed up I decided to go ahead and do another batch of my famous Kombucha. It really is so yummy. Here is a video showing the process of making the Kombucha at home.

Fermenting foods is a fun hobby and pretty easy to do! It is important to incorporate some fermented foods into your diet. There are loads of natural probiotics that help balance our gut health. You know if your gut aint happy, aint nobody parts happy! LOL

Awesome being gifted foods from your garden!

I make all of these as well, love my kefir!

I really want to get started with kombucha. Do you know if it turns slightly alcoholic? I've gotten mixed answers in the past and my body doesn't tolerate alcohol well, so I've put it off for that reason oh and the need for a big container to brew it in, which we don't have.

It is likely that your home brew Kombucha will have a very low alcohol content. From what I understand it will likely be under 1%.

I have a friend that love to do ferments of all kinds. He has several virilities of kruat ches's Hot traditional kim che. purple cabbage, mixed veggies with dicom to name just a few.

His fermented "sour dough" breads are to die for.

His lacto fermented multi grain serial is not only vary tasty but far easier to digest then unformatted.

Our favourite ferment though is our beers. They two are fantastic.

Kambucha is not on our list of ferments though. Likely never will be because of personal taste and it gets into everything ruining the ones we like.
