Homestead Homefries!

Today on Homestead Homebodies we are showing you how we make our Homestead Home Fries.

Potatoes vary so much in price. Sometimes they are as low as 99 cents for 10 pounds, and other times they go for $4.99 for the same amount. We take advantage of the low prices by making home fries to freeze.

First they are scrubbed and sliced. We don't bother to peel them. Then the slices are cubed using this handy dicer, which, by the way, is really great for dicing lots of onions. After dicing, the potatoes go into cold water to rinse off some of the starch and keep them from turning colour.

A big pot of water is brought to a boil and the cubed potatoes go in for 5 minutes.
Then they are strained and placed into a bowl of cold water to stop the cooking. This is known as blanching.

After draining, the blanched potatoes are spread on wax-paper lined cookie sheets and placed into the freezer. Doing it this way prevents the potatoes from sticking together and makes it easy to take out exactly the amount you need.

When the potatoes are frozen, they are placed into freezer bags and kept frozen until needed.

To prepare, the frozen potato cubes are placed into a pan with some heated oil, seasoned, covered, and slowly cooked, stirring often until they are brown and crispy.

They are a perfect accompaniment to our farm fresh eggs for breakfast, as well as a quick and easy side dish for hamburgers or other meals.

Oh great! Now I'm hungry and still two hours until lunch. Seriously though, those home fries look delicious. I've just added them to my breakfast menu for tomorrow. I hope mine turn out as good as yours look.

Also, thanks for the idea about preparing ahead of time and then freezing. We have plenty of freezer space and cheap potatoes sounds like a great way to make use of the extra space.

Nice! Cool idea to store potatoes for future use. In India the price of potatoes have become almost become 5 times compared to what it was a decade ago. But still it's affordable it's very cheap compared to U.S. /U.K. price but fairly affordable here. The price you will be amazed to hear - it's 25 to 30 cents per kilogram. :)

Do you mean that a decade ago that potatoes were 5-6 cents per kilo? Wow!

Friend brimax you just gave me a new idea to cook the potatoes in Venezuela we make them pureed, fried, parboiled and even in potato cake I already have a new way to cook them thank you very grateful

Hello greetings friend brimax, really very good and useful your publication, the good thing about doing this is that freezing the potatoes can last a certain time there and will not be damaged, because when freezing they are conserved, it is better to do this than to leave the potatoes as they come from the market because they are so damaged faster, to have them frozen, the day they are going to prepare just take out of the freezer and ready to fry or boil, and also saves us a lot of time already having them already frozen.
