Harvesting and dehydrating finger egg plant
These are some egg plants we have been growing at our home in town.
Once we have finished building and move out to the bush block we hope to build many vegetable gardens and plant lots of fruit trees.
Never thought of dehydrating eggplant.
When I grill it raw I slice it and cover it with kosher salt to sweat it and then rinse it a few hours later. I think it makes a better flavor.
Maybe the lemon accomplishes the same thing.
What kind of flavor do these finger eggplants have?
Taste is the same as a regular egg plant :)
