Never thought of dehydrating eggplant.
When I grill it raw I slice it and cover it with kosher salt to sweat it and then rinse it a few hours later. I think it makes a better flavor.
Maybe the lemon accomplishes the same thing.
What kind of flavor do these finger eggplants have?
Taste is the same as a regular egg plant :)
