Ingredients
- Tende leaves
- Locust beans
- Seasoning Cubes
- Salt
- Local Potash
- Palm oil
- Pepper
- Onion
Preparation
After getting the fresh leaves from the tree, parboil them with a little local Potash in a boiling water and allow to drain.
The fresh leaves I got from the market
When it is drained, pound the leaves in a mortar and keep aside.
Pound your locust beans,. Onion and pepper and put inside a pot then add seasoning cubes, salt, fish and palm oil then allow to boil before adding the already pounded leaves.
But don't go far as you will keep stiring with a spoon until it is cooked.
It can be served with any kind of swallow.
Soup is ready
Note: Swallow is a Nigerian solid food that can be processed using corn, cassava or even wheat.
So today I'm using corn swallow to eat my favorite soup.
Preparation of Swallow
- Set a pot of water on the fire and when it boils, soak a handful of corn flour in a cold water and turn into the boiling water while stirring.
Then allow to boil before adding dried flour and continue stirring until you get your desired thickness and then bring it to for consumption.
This is a seasonal leaves in my area because only the tender leaves are used for the soup which is gotten around mid February to mid March when tress are beginning to change leaves.
My people cherish vegetables a lot because most of our local soups are either fresh or dried vegetables.
Oh yes, even this tende can be dried to be used at raining season to prepare the soup.
