Greetings steemians!

Hope you all are doing good? Seeing this amazing contest made me very happy and I'm glad I'm participating as well. It's a very interesting contest organized by @micro.snt about our local food and I'm glad I'll be getting to read about other local food as well. So in my blog today, I'll be sharing with you all a receipé of my favorite local food. The name of the local food is UKAZI SOUP & EBA

Ukazi soup and Eba

This delicious local food is common in the Eastern part of Nigeria precisely in Abia State, Ngwa and I happen to be from this part of Nigeria. It is also one of the local food that must not be left out during occasions like traditional wedding, burial rites etc. And during occasions such as the ones I just mentioned, it is being prepared with moulded melon or "akpurakpu mgbam" as we call it in my dialect. The soup is made with a vegetable gotten from a tree called "Ukazi tree" and not everyone can actually cut this leaf because it requires a lot of experience so as to cut into tiny tiny strands just as it is here.

The Eba is gotten from cassava which after it's been processed it can be used to make the Eba or "swallow" as we fondly call it.


Preparing Ukazi soup and Eba is very easy and also not time consuming and normally much ingredients are not necessarily needed except maybe you have some cool cash to spend😃
So, here are the ingredients I use to cook my Ukazi soup and eba.

Ingredients

  • Ukazi
  • Dry fish
  • Fresh fish
  • Kpomo meat
  • Achara vegetable
  • Egusi or grounded melon
  • Achi thickner
  • Dry pepper
  • Salt
  • Palm oil
  • Seasoning cube
  • Eba

HOW I PREPARE MY UKAZI SOUP

  • I wash my fresh fish, dry fish and Kpomo meat thoroughly.

  • Then add little quantity of salt, onions, pepper and one seasoning cube before I put on heat to steam.

  • I wash my Achara vegetable and add some onions before I steam on heat too.

  • And when I'm done steaming all of the above, I'll add a little water into an empty pot, add my melon/grounded Egusi and allow to boil very well let's say in 10 minutes.

  • I'll stir the Egusi a bit and then add a little quantity of palm oil and mix together.

  • I'll allow to boil a bit and then add Achi thickner, pepper and salt.

  • Then I add my already steamed achara vegetable.

  • Then i wash my Ukazi leaf and add to the pot and also add my steamed fish and meat.

  • Stir and allow to boil for a while.

And my Ukazi soup is ready!😋

HOW I PREPARE MY EBA

  • I boil water (allow to boil very well)
  • Pour hot water inside a bowl
  • Add the already processed Eba inside the bowl and turn very well with a wooden turner

And my Eba is ready to be enjoyed with my Ukazi soup😋

Other kinds of swallow like "fufu" or "yam flour" can also be used to enjoy the ukazi soup depending on choice but I love eating my Ukazi soup with Eba.
