Share And Talk About A Particular Dish That Reminds You of Home (FUFU CORN AND KATI KATI)

Hello steemians. It's is another amazing day and a great contest organized by our own @jenesa. This is indeed a wonderful contest and reminds me a much of not only home but of my childhood. I am happy and pleased to be participating in this contest. I invite @etongo @chegodrick and @njiatanga to participate in this contest.

The Particular dish that reminds me of home

Fufu corn and Njama Njama with Kati kati( Fufu corn and Huckleberry)

Fufu coin and Njama Njama as usually called in my country, a a special delicacy in my area in the Northwest region of Cameroon. In this region, we have over 7 divisions with more than 30 villages and what is unique is that more than 25 villages consider this meal as their traditional meal, that is, it is serve in every occasion in this part of the country Cameroon.

When growing up I used to eat this meal alot, but due to the Anglophone crisis that current in this part of the country it's been a while I ate this food especially the one prepared in the traditional way Kati Kati(Chicken). I miss this food so much and that's why I'm grateful for this Contest. I developed nostalgia just thinking back to those days.

How to prepare this Delicacy called Fufu and Njama Njama.

  1. Corn Flour. Grind maize
  2. Huckleberry
  3. Palm oil
  4. Chicken (fowl)
  5. Tomatoes
  6. Maggi
  7. Onions
  8. Seasoning

Steps to preparing it.

  1. Grind the corn ( maize). The first thing is to take the dried maize to a grinding mill to grind it into flour

  2. The next thing is to heat water, a good quantity and it usually takes about an hour so it boil very well. The amount of water will be dependent on the quantity you want

  3. While heating the water, we them seize the corn flour, to use only the finer one.

  4. When our water is properly hot and is boiling, we then pour in our cornflour into the pot and steer continuously for about an hour or 2. This process and time is also dependent on the amount of corn fufu we want.

  5. When we think it's ready, we then remove it and put in plantain leaf that we have smoked for about 3 minutes.

  6. The next thing is the vegetable. We boil the vegetable about 30min to an hour depending on the quantity.

  7. When the vegetable(huckleberry) is ready, we removed it, squeeze out the water in it, and the slice in to tiny pieces ( this is not compulsory as not everyone wants it in tiny pieces)

  8. Then we put a good quantity of red oil in the pot to be hot, after which we pour our tomate, seasonings and other ingredients to make a tomate sauce.

  9. After we estimate that the sauce is good, we the pour the huckleberry onto the pot and steer continue for about 30 minutes to let the seasoning from the sauce get into the huckleberry and Tada!! Our vegetables ( huckleberry is ready)

Now the last thing but not the least is the chicken(kati kati)..I will explain how it is prepared traditionally.

  1. The chicken is the killed and roasted to get the feathers off. Unlike the normal process where we boil water to remove the feathers, here we roast the feathers. This process increases the taste of the chicken.

  2. After roasting properly, we then cut the belly and remove the parts that are not to be eaten.

  3. Then we continue the roasting properly, this time we roasted to get it ready for consumption. When it's roasted well, we the cut it into tiny tiny pieces. This is what is called in the dialect kati kati( cutting into pieces)

  4. When we done with the cutting, we put salt and a little bit of maggi into it and red oil.

Now our fufu coin and Kati kati is ready.

Unfortunately I can't share the pictures here because it's been years we did something like this.

😭😭 How I miss this meal. Fufu coin and Kati kati.
