It’s a pleasure for me to share this special recipe with everyone here. Welcome to my food blog. Today, chef @adylinah will present recipe of a delicious delicacy called; Egusi ( melon) soup. Melon soup recipe is very simple and easy to prepare at any given time. Everyone has their different methods on how to make this soup including me. I will show the step-by-step preparation process of my melon soup recipe.

Raw ingredients
- Melon
- Onions
- Fresh pepper
- Chicken and iced fish
- Periwinkle
- Salt
- Maggi
- Palm oil
- Bitter leaf
- Stock fish
Preparation Procedures |

Step 1: the first step for this recipe is to mix blended melon in a pot and boil for 20 minutes.

Step 2: wash, spice and steam chicken and fish together. After few minutes, add stock fish.

Step 3: Pour melon into the pot, add palm oil (red oil) and cover it to cook for 8 minutes. It is healthy to boil melon properly.

Step 4: Add other ingredients ( crayfish, maggi, salt, and pepper).

Step 5: Add periwinkle, allow it to boil for 2 minutes before adding bitter leaf and cover to cook. Few minutes later, my delicious melon soup was ready.

Please note that the bitter leaf was washed before use. Bitter leaf is very healthy in soups and in absence of it, hot leaf can be used in melon soup as well.
