Cook Your Traditional Dish Contest| Very famous Beef Biryani by Aniqa Mashkoor ~ 10% to @womenclubcharity.
Today I am here to participate in a cooking contest created by @event-horizon. The contest itself is very yummy :p This is about cooking your traditional dish. So everyone is well aware that in Pakistan especially in Karachi biryani is something that is very famous and is eaten all around the country.

Let's get started, This is a different kind of biryani like there are 2 ways either you can cook the gravy first and boil the rice then do layering, or in another type, you can add spices to meat and settle the meat at the bottom of the pot and then spread all the rice and cook everything all together on a low flame. This one is known as حیدرآبادی کچے گوشت کی بریانی
INGREDIENTS:
- Meat (beef/chicken/lamb)
- Rice
- Oil
- Green chilies
- Papaya
- Mint leaves
- Ginger & Garlic paste
- Yogurt
- Onion
- Tomatoes
- Biryani Masala
- Yellow food color
- Biryani essence (Optional)
- Salt
- Cloves (long)
- Bay leaves (Tez paat)
- Cinnamon stick (Daar chini)
- Black cardamom (Bri ilaichi)
PREPARATION:
- At first take 7 to 8 green chilies and papaya and grind them well in a paste form, add this paste into the pot.
- After adding this paste into the pot add the mint leaves and biryani spice mix into the pot, remember in this biryani we will add all the spices at the bottom layer.
Wash the meat properly and drain it, then add it to the pot. I am using beef meat.
Now, in a separate pan take around one and a half cups oil and add sliced onion into it. Cook it until golden fry. In the oil add Bay leaves.
- Add the fried onion and oil into the pot. Sliced the onion and add them too. Add 4 t spoon of ginger garlic paste into the pot.
- Add half cup yogurt and mix it well. Cover the pot and place it on the side for almost 2 or 3 hours. We have added papaya into it it will make our meat tender.
NOW COME THE RICE PART:
At first, soaked the rice in water for half-hour and on the stove put the water in a boil for a boil. In water, I added cloves, Cumin seeds, Black cardamom, and salt.
After the rice gets boiled, strain the water and time to layer up. . At first, I set the beef gravy at the bottom layer, then added rice over them
Now add the yellow food color and biryani essence, you can add lemon too at this stage and add a t-spoon of oil.
This is the final layer, add fried onion over the top and cover the lit. Place it on the stove at the medium-low flame and it will take around 50 to 60 minutes, REMEMBER the flame must be low.
TRAN!!!
Open te lit after almost 50 60 minutes and mix it, trust me I smell so good, the authentic biryani aroma was there everywhere.
