Hallaca is a traditional Venezuelan dish that is usually prepared and eaten during the Christmas season, and also has the virtue of gathering the whole family around the table during Christmas Eve and New Year's Eve dinners.
It basically consists of a corn dough colored with onoto, stuffed with stew based on beef, pork or chicken, accompanied by olives, capers and other elements that vary according to the region. It is wrapped in banana leaves and cooked in boiling water. Although it has some similarities with the Mexican tamale, the preparation is much more complex and laborious, and a larger quantity of ingredients is used.
This picture corresponds to the recent month of December, during the preparation of the family hallacas at my mother's house, with the help of my sister and me.

La hallaca es un plato tradicional venezolano que se suele preparar y degustar en la época decembrina, y que además, tiene la virtud de reunir a toda la familia alrededor de la mesa durante las cenas de Nochebuena y en la víspera de Año Nuevo.
Consiste básicamente en una masa de máiz coloreado con onoto, relleno con guiso a base de carnes de res, de puerco o de pollo, acompañado de aceitunas, alcaparras y otros elemementos que varían según la region. Se envuelve en hojas de plátano y su cocción se realiza en agua hirviendo. Aunque presenta algunas similitudes con el tamal mexicano, la preparación es mucho mas compleja y laboriosa, y se emplea unamayor cantidad de ingredientes.
Esta fotografía, corresponde al reciente mes de Diciembre, durante la elaboración de las hallacas de la familia en casa de mi madre, con la ayuda de mi hermana y la mía.
