Crispy Crumbed Haddock
I come from a family of salt lovers - or perhaps the word I am looking for is addicts, lol. I can actually remember one of my brothers as a kid, licking piles of salt out of the palm of his hand, haha! I don't think I have ever been quite that bad, but I do love my salt and I will never forget the day, many years back... when my late mom introduced me to haddock fish!
I have always enjoyed fish, but haddock is without question my favourite! It is the most deliciously salty thing you have ever eaten - though no doubt some people would not agree with me, so this recipe is definitely not for them! Originally, my mom taught me the cooking method of boiling it in milk with black peppercorns and I enjoy that very much - but the last time I managed to grab some fresh haddock from the back of a fishermans truck I decided that I wanted to try something different.
Crispy Crumbed Haddock
WHAT YOU WILL NEED
¾ cup milk
2 teaspoons salt
¾ cup bread crumbs
¼ cup grated Parmesan cheese
¼ teaspoon ground dried thyme
4-6 haddock fillets
¼ cup butter, melted
This is a really easy dish to prepare, so makes a great week night dinner for when time is not on your side. Start off by placing your oven tray in the top third of the oven and heating the oven to 260 degrees Celsius (500 degrees F). In a small bowl, add the milk and the salt and give it a stir. In another bowl, mix the bread crumbs, the parmesan cheese and the freshly chopped thyme. If you don't have fresh thyme you can always use dried bottled thyme.
Place the haddock fillets into the milk mixture and let them soak for about 30 minutes. The milk actually helps to reduce the often strong fishy smell which it normally gives off.
Once soaked, you can then dip the fish into the crumb and parmesan mixture, making sure that both sides of each fillet are evenly covered in the crumb coating.
Then put the fillets into an oven baking dish and drizzle them with the melted butter. Put the tray in the oven for approximately 15 minutes until the fish is tender and flaky and the crumbing is lovely and golden.
And that is it - you are done with the fish! Haddock has a truly unique, but also quite a strong flavour, so I prefer to serve it with mild sides that don't detract from the bold taste experience. Often I really enjoy salad with fish, but in this instance I decided to go with a simple boiled potato (I far prefer boiled potatoes to baked potatoes because they are not so dry) and some blanched broccoli.
Simple. Tasty. Quick!

lol - it seems more common in kids. My son too... also went though a stage where he was putting copious amounts of salt on his food - thankfully that ended :D
